What is Injera?

Injera is a unique Ethiopian flatbread — round, spongy, slightly sour, made from teff flour (an ancient grain). Injera is also the eating vessel — food is served directly on it, eaten by hand, shared communally.

Teff Nutrition

Gluten-free (suitable for coeliac). Rich in iron, calcium, zinc (anaemia prevention). High dietary fibre. Low glycaemic index (suitable for diabetics).

Basic Injera Recipe

2 cups teff flour + 2 cups water + pinch salt. Mix, ferment 48 hours at room temperature. Cook on a lightly damp (not oiled) pan for 2 minutes per side.
